What would be a good starting point on the spec 12 gearing?

72/50. Rollout around 90-100

100 is where you want to be. 72 spur, 56 pinion with a 41mm tire. 42mm tire gets you 102. 43mm gets you 104.

Yep. Your rollout will change as your tires wear. So in order to keep 100, you'd need roughly 55-56-57 pinions if you have a 72 spur. Thatd cover all of your tire sizes. Or run in the middle of those, and just run
