What would be a good starting point on the spec 12 gearing?

72/50. Rollout around 90-100

100 is where you want to be. 72 spur, 56 pinion with a 41mm tire. 42mm tire gets you 102. 43mm gets you 104.

Thanks for the info. The thicker the tire the smaller the pinion?

Yep. Your rollout will change as your tires wear. So in order to keep 100, you'd need roughly 55-56-57 pinions if you have a 72 spur. Thatd cover all of your tire sizes. Or run in the middle of those, and just run :)
